Potassium hydrogen carbonate and as well sodium hydrogen carbonat are used as leavening agents in industrially produced food products. In industrialized countries, the many hidden sodium sources in food products increasingly result in negative health effects, such as high blood pressure.
Even European legislative authorities have become aware of these negative effects and are engaged in the subject of decreasing sodium salt concentration in food products. Therefore, many suppliers are switching to potassium. As an alternative solution Evonik offers potassium hydrogen carbonate to meet the growing demand.
